A dry rub (a.k.a dry brine) is any type of dry seasoning applied to meat or veg before it is cooked. The function of a dry rub is to season meat or veg ahead of time, giving the salt and other flavourings time to penetrate the meat, so that you’re seasoning the whole piece—not just the surface. It’s called dry to distinguish it from wet brines and marinades, which involve liquids.

Choose the right rub: Master Griller SPG  or Blaze of Glory BBQ

 

Prepare protein or veggies: Dry the protein you want to cook, such as red meat, poultry, pork, fish, or veg.

 

Apply the rub:

  1.  Sprinkle the seasoned rub onto the protein or veg, ensuring it is evenly coated. Use your hands or a spoon to rub it in, allowing the flavours to penetrate the food. If you prefer a stronger taste, you can apply a thicker layer of rub. 

  2. Smoking: For bigger cuts like brisket and pork shoulder, before applying the rub, apply an emulsifier like olive oil, mustard, or hot sauce to help the rub stick and form a bark. After a long cook, the slather won’t have much impact on the flavour of the meat but it’s still good to be judicious in how much you apply. The more slather you use, the more likely it is that your bark will flake off as the meat shrinks during the cook (though that’s a much bigger concern for a cut like brisket than for, say, pork butt). Aim to get the meat tacky, but not wet. Slather just enough!

Let it rest: After applying the rub, let the protein rest for a while before cooking. This allows the flavours to further infuse into the food. Depending on the recipe, you can let it rest for 15 minutes to a few hours in the refrigerator.

Cook the protein: Cook the protein using your preferred method, such as grilling, smoking, baking, or pan-searing. The seasoned rub will create a flavourful crust or coating on the outside, enhancing the taste of the dish. Follow the recipe instructions for cooking times and temperatures.

Enjoy: Once the protein is cooked to your desired level of doneness, serve, and enjoy the delicious flavours of the seasoned rub. You can pair it with sides, sauces, or garnishes that complement the flavours of the rub.

    Remember, seasoned rubs can be quite versatile, so feel free to experiment and  adjust the amount of rub used according to your taste preferences.
